Apple strudel

  • 250 grams of medium strength wheat flour.

  • 1 medium egg.

  • 100 milliliters of water.

  • A tablespoon of oil.

For the filling

  • 6 to 7 pieces of apples.

  • 80 grams of raisins.

  • 50 milliliters of rum.

  • 100 grams of walnuts.

  • 4 tablespoons of breadcrumbs.

  • 6 to 8 tablespoons sugar.

  • 2 teaspoons vanilla sugar.

  • 1 lemon juice.

  • 30 grams of butter to spread the dough.

Steps for the elaboration

  1. Place the raisins in a container and add the hot rum, so the raisins marinate.

  2. If you don't want to use the rum you can put the hot water, but an apple strudel always has a touch of rum.

  3. Leave them marinating until the moment you need them. You can also marinate them overnight.

  • In a container place the previously sifted flour.

  • Crack 1 medium-sized egg, then add 1 tablespoon of oil, 1 pinch of salt, and warm water. Stir everything very well.

  • Cover the container and let the dough rest for 15 to 20 minutes, so that the flour particles are properly moistened, and the dough acquires body.

  • Peel the apples and once done, and you have removed the core, cut them into 0.5 cm pieces.

  • Place a skillet over high heat and add 15 grams or 1 tablespoon of butter, then add the apples.

  • Squeeze the juice of 1/2 lemon on top, then add 3 tablespoons of sugar.

  • Stew the apples until they release the juice and then this juice evaporates. When you see that the juice has evaporated, remove the apples from the heat.

  • Place them in a container and let them cool.

  • Pour the dough out on the table and knead for at least 7 minutes. Ideally, it should be very soft but at the same time with body and consistency. With this amount of dough, 2 strudel 45 cm long come out.

  • Divide the dough into two pieces of the same weight. Knead the two pieces and shape them into balls.

  • Take two pieces of plastic, spread them with oil and wrap the dough inside.

  • Store the dough in the fridge for 30 minutes.

  • Add 1 teaspoon of vanilla sugar to the apples. You can also use the essence of vanilla or vanilla branch.

  • Then add the chopped walnuts, breadcrumbs and raisins. Remove everything.

  • Taste the filling in case it needs a little more sugar and adjust it to your liking.

Assembling the strudel

  • Turn the oven to 190º C with heat from above and below. If you don't have this function, put the heat below.

  • To stretch the dough, cover the table with a piece of cloth or a tablecloth and put a piece of cloth or a 50x70 cm cloth on top.

  • Sprinkle the cloth with flour and rub to allow the flour to penetrate the fabric. This is so the dough doesn't stick to the cloth.

  • Take the dough and with the help of a rolling pin, roll it out from the center. Later, stretch with your hands until you finish stretching on the table.

  • When you notice that the center is already quite thin and what you should stretch are the edges, spread carefully, but without fear. This must be very fine.

  • Spread the dough with the melted butter. You can use both salted and unsalted butter.

  • Top with the filling on one edge. With a knife, remove the thick part of the edges.

  • Brush the edge with the butter and close the strudel by closing the ends and removing the excess.

  • Place the strudel on a baking sheet lined with parchment paper.

Bake the strudel

  • Take the strudel to the oven and let it bake for 30 to 35 minutes or until golden brown.

  • Remove the strudel from the oven and allow it to cool to room temperature. When it is already warm you can cut it and serve it.

  • To decorate, sprinkle with icing or powdered sugar.

What should I accompany the strudel with?

It is a tradition to accompany strudel with ice cream, especially if it is vanilla ice cream.
