440 grams of sugar

Steps for the elaboration
Place the almonds on a tray and take them to the oven to toast them. Once you notice that they give off a pleasant smell and are toasted, remove from the oven.
Put 400 grams of sugar in a saucepan, followed by 125 cc of water and 90 grams of glucose.
Leave the saucepan on the stove over low heat, but without stirring or touching the contents of the saucepan.
Pour the honey into another saucepan and place it on the stove over low heat and let it heat up.
Separate the yolks from the eggs and reserve the whites.

250 grams of sugar.
Steps for the elaboration
Place a dry skillet over medium low heat on the stove and then pour the sugar over it.
Stir the sugar repeatedly with the help of a paddle as it melts. Be very careful that it does not burn, as it will acquire a bitter taste. You should also be careful not to burn yourself.
Have the peanuts prepared in advance and once you notice that the sugar has completely melted and is still a little light, add the peanuts to the pan.
Stir with the trowel to integrate it.
In a silicone bar, pour a little oil and grease, distributing it over the entire surface, likewise, grease a roller with oil. If you don't have a silicone plate, just grease a clean, smooth surface.
